breakfast muffins

Oh For these I used ham instead of pastry, then used egg, tomato and spring onion for the filling. I cooked in an oven at 200 until cooked.

Coffee cupcakes (2syns) and vanilla cupcakes (3 syns). 

3 eggs
60g of low fat spread 
6tbs of sweetener
110g of self raising flour

I added 4 teaspoon of coffee to the mixture for the coffee ones and 1 teaspoon of vanilla to make the vanilla ones.



Sweet tooth

I've added some coco powder and espresso to a meringue mixture and the following pic is the out come. They were yummy.

Onion Bhajis, Samosas, Pakoras







I love curry but I miss having the Samosas , onion bhajis and pakoras with them. So I tried making some, I found the recipes on the slimming world website and they turned out great.





Onion Bhajis - 1 syn each
Ingredients
  • 200g onions, peeled, halved and thinly sliced
  • 60g gram flour
  • 1 tsp lemon juice
  • 2 tsp ground cumin
  • 1 tbsp coriander seeds, crushed
  • 1 tsp deseeded and chopped green chilli
  • 1 tbsp chopped coriander leaves
  • ¼ tsp baking powder
  • Salt
  • Low calorie cooking spray

Method

  1. Place the onions, gram flour, lemon juice, cumin, coriander seeds, green chilli, chopped coriander and baking powder in a mixing bowl. Season with salt and add a few tablespoons of water to form a thick batter that coats the onion. Leave to rest for 15 minutes and then, using your fingers, mix again to combine thoroughly.
  2. Preheat the oven to 220°C/200°C Fan/Gas 7. Line a baking sheet with baking parchment and, using your fingers or a dessert spoon, drop small mounds of the mixture onto the prepared baking sheet to give you 12 bhajis.
  3. Spray with low calorie cooking spray and bake for 15-20 minutes until golden. Remove from the oven and serve immediately sprinkled with the paprika.

Samosas  -  1 Syn Each

Ingredients

  • Low calorie cooking spray
  • 1 tbsp mild curry powder
  • 1 tsp amchoor (dried mango powder)*
  • 400g potatoes, peeled, boiled and mashed
  • 110g frozen peas
  • 4 tbsp finely chopped coriander
  • 1 red chilli, deseeded and finely chopped
  • Salt
  • 3 jumbo filo pastry sheets (50cm x 24cm)

Method

  1. Spray a large non-stick frying pan with low calorie cooking spray and place over a medium heat. Add the curry powder, amchoor, potatoes and peas and stir-fry for 4-5 minutes. Remove from the heat and add the chopped coriander and red chilli, season well with salt and set aside.
  2. Preheat the oven to 190°C/170°C Fan/Gas 5. Line a large baking sheet with baking parchment. Working swiftly, place the three filo sheets on top of each other and cut them in half widthways. Then cut each half into three even strips lengthways to give you a total of six strips of filo per sheet (18 strips in total).
  3. Lay the strips on a clean work surface and lightly spray with low calorie cooking spray. Place a teaspoon of the potato filling at the bottom of each strip and fold the pastry diagonally to enclose the filling and form a triangle. Press down on the pastry and fold again until you reach the end of the strip leaving you with a triangular pastry parcel. Repeat with the remaining strips and filling to make 18 parcels.
  4. Place the parcels in a single layer on the prepared baking sheet, spray with low calorie cooking spray and bake for 15-20 minutes or until golden and crisp. Remove from the oven and serve warm with the hara chutney.
Pakora - free on extra easy

Ingredients

  • 2 large white potatoes, cooked and mashed to a firm consistency with no butter or milk
  • 1 red onion, diced
  • ½ large bag of frozen chopped vegetable mix (sweetcorn, broccoli, carrot, cauliflower)
  • 2 tbsp curry powder (use mild, medium or hot to suit your own taste)
  • 3-4 tbsp fat free yogurt
  • 1 egg, beaten
  • Low calorie cooking spray

Method

  1. Pre heat the oven to 200°C/180°C Fan/Gas 6. Place the mashed potato, diced onion and defrosted vegetables into a bowl and combine thoroughly.
  2. Stir the curry powder into the yogurt and add this to the vegetable mix and stir thoroughly.
  3. Beat the egg and add it to the mixture, stirring constantly. The mix should still be quite firm, but if it's too runny add more vegetables.
  4. Line a baking tray/wire rack with baking paper to prevent the pakoras from sticking, and spoon the mixture onto the tray in tablespoon sized ''dollops''.
  5. Spray with low calorie cooking spray and bake for approximately 30-40 minutes - or until firm on the outside and golden brown
